Ingredients
2 Cajun-style boudin links or 2 cups of dirty rice
½ cup of all-purpose flour
½ cup of dry bread crumbs
2 eggs
1 tsp of cajun seasoning, 1 tsp parsley, 1 tsp onion and garlic powder, 1 tsp of paprika

Directions
Cut open the boudin links and remove the rice if not using separate dirty rice.
Place the eggs, flour, and bread crumbs in their own separate bowls.
Add the seasonings and spices to the flour bowl and stir.
Roll the rice mixture into 1 ½ inch balls.
Roll a ball into the flour 1st, egg 2nd, and bread crumbs last and then place in hot oil to fry.
Only put 3-4 balls in at a time to fry.
Boudin Balls are done when they have turned a nice golden brown color
