Super Glazed Banana Nut Bread

Ingredients

  • 2 cups of all-purpose flour

  • 4 eggs

  • 1 cup of pecans (your nut of choice)

  • 1 cup of real butter

  • 2 tsp of vanilla

  • 2 tsp of cinnamon

  • 1 cup of white granulated sugar

  • 1 cup of brown sugar

  • 2 cups of mashed ripe bananas

  • 2 tsp of baking soda

  • 2 extra teaspoons of sugar, cinnamon, and butter to dust the pan

  • A few sliced bananas and nuts for garnish

  • Glaze/Icing - 1 cup of powdered sugar 2 tbsps of milk

  • 2 9x5 loaf pans

Preparation

  1. Preheat the oven to 350 degrees.

  2. Dust the 2 pans with butter and then add the sugar and cinnamon on the bottom and sides of pans.

  3. Mix the sugar and butter really well in a big enough bowl for all ingredients.

  4. Add the eggs, vanilla, nuts, and bananas to the mixture and mix together.

  5. Now add in the flour, cinnamon, and baking soda to the mixture.

  6. Don’t over mix.

  7. Pour the mixture into the dusted pans. Half in each pan.

  8. Place in the oven for 40 mins. At this point use a toothpick to stick in the middle of the bread to test to see if it's done. If the toothpick comes out clean, it's done. If not, leave it in the oven for another 5-10 mins.

  9. Once done, allow the bread to cool by placing it on a cooling rack.

  10. While the bread cools, you can make the glaze. You don’t want to add the glaze to the hot bread because it will melt and not hold its consistency.

  11. Mix the powdered sugar and milk together in a bowl until all the lumps are dissolved.

  12. Drizzle the glaze over the banana bread once it has cooled and garnish with nuts and sliced bananas.

  13. Try not to eat it all in one sitting! LOL It's that good!!!

Lagniappe

You can substitute the bananas for strawberries or any other fruit. You can substitute the brown sugar for white and not add the cinnamon for color purposes if you want a lighter colored bread. Keep refrigerated if there are any leftovers!
